Summary: Based on learning approaches in organizations and professional competences, the present study aimed to identify, describe and analyze the learning processes of competences in the extracurricular programs junior company, scientific initiation and tutorial education program developed by students of the administration courses (morning and nocturnal) of the Federal University of Espírito Santo. As for the research subjects, 15 students who participated in these programs were selected in the last 2 years (2015 to 2017), who were interviewed through a semi-structured interview script. In the presentation and discussion of the data, through the method of qualitative data analysis, it was identified that the learning processes located, social learning, informal and incidental learning, learning in practice and experiential learning make it possible to develop students' professional skills in these programs. In comparing the competences developed, it was shown that social skills, management, problem solving, communication and scientific research were the most developed among the students participating in the programs. It was also verified that the learning processes focused on the development of competences constitutes a potentiator of the academic and professional development of these students. In addition, in developing such programs, students are able to contextualize theoretical instruction with developed actions, thus being able to make sense of concepts and overcome existing barriers to learning skills based solely on teaching content transmission. Lastly, suggestions for future research are presented.
